 Your table will look elegant when you present these mouthwatering appetizers to your guests.  You will fully participate in the preparation of artichoke spinach bites, cheese straws, eggplant and red pepper appetizer, salami Stromboli and sausage bread made with homemade dough. Please bring containers to class for leftovers.

A TASTE OF ITALY                                                                             FEE: $70 (plus $45 mat. fee due at reg.)

Thursday, 6:30-9:30 p.m. (2 sess. Sept. 29 & Oct. 6)                                        Midland Park H.S.

Continue to broaden your culinary experience as we proceed with a new version of “A Taste of Italy”.  In this two-night class you will fully participate in the preparation of mouthwatering savory cuisine.  Our first night will feature Lazy Lasagna layered with ricotta cheese and a meat sauce.  We continue to compliment the meal with antipasto salad and garlic bread.  Don’t forget our fabulous cannolis for dessert made with our homemade cannoli filling.  Onward we proceed to week two as you prepare Eggplant Parmigiana with a homemade Italian Gravy (sauce) and tomato and fresh mozzarella skewers dressed in a balsamic vinaigrette dressing.  We will finish our meal with pizzelles for dessert.  This class will leave you with a pleasant taste.  Bring to class: apron, dishtowel, chopping knife and take home containers.

AUTHENTIC INDIAN COOKING                                                  FEE:  $50 (plus $35 mat. fee due at reg.)

In the first night of this hands-on class you'll discover how to prepare delicious recipes such as  Chicken Curry - Add marinated chicken to a base curry which can be used for any protein or vegetable, Mixed Vegetable Curry - Bring various veggies together with an interesting coconut curry base (this goes well with bread or rice), Basmati Rice - Basmati rice flavored with butter and Cucumber Raita - Yogurt and cucumber with a dash of cumin spice will be the best condiment to add to your rice and curry. Night two you learn how to make Rotis - Flattened bread with whole wheat bread, Eggplant Potato - Saute eggplants with potato and add some mild spices to make it a curry and Tomato in Yogurt Sauce - Tomatoes cooked with onions and added to yogurt make the best curry to eat with rotis.  Bring to class: apron, dish towels, paring and chopping knife, peeler and take home containers.  Instructor:  SUBBA MARELLAPUDI

This class will leave you with a good taste in your mouth.  Come join us as you fully participate in the making of

these elegant cookies that will make your holiday table look festive.  In this class you will be making Sour Cream

Cookies, Pecan Tarts, Jelly Filled Bar Cookies, Apricot Thumbprints and Almond Walnut Cookies.  You will also

learn and see how to prepare a Cream Puff Wreath filled with a Bavarian filling. Please bring containers to class.

FALL PIE BASICS – Get Prepared for the Holidays!                                 FEE: $70 (plus $16 mat. fee due at reg.)

Is making pie crust a challenge for you? Or, do you usually run out of time to make a pie for Thanksgiving? If your answer is “yes” to either question, then you need to join this class. Kim will explain the details of making a flaky, buttery crust, then give each person a chance to make their own pastry which will be taken home to rest until night two. You will choose what kind of pie you will make before the second night so that by the end of class you have a pie to save or freeze. If making an apple, cranberry/pear (Kim’s favorite), pecan, Dutch nut pie, lemon meringue or sweet potato pie tickles your taste buds; join us.  Bring to class: apron, dish towel, oven mitts, paring knife and 9-10 inch glass or metal pie pan.    Instructor:  KIM HENDRICKSON

We delight in them even when their delicate nature makes them brittle and broken, these fragile cookies are really not hard to make once you know a few tips. Kim coaches you each night for three nights so you have enough cookies to take home.   Please bring containers, an apron and oven mitts.  Instructor:  KIM HENDRICKSON

 

FUDGE SIMPLIFIED                                                                        FEE:  $40 (plus $15 mat. Fee due at reg.)

Classic fudge is frustrating and completely unpredictable. Come to this one night class to learn how to make fudge for the holidays. Taste a variety of flavors when we create Chocolate Walnut, Peanut Butter and Rocky Road Fudge recipes.  Bring to class:  apron, dish towel, oven mitts, chopping knife and take home containers.

MAKING BAKLAVA WITH GEORGE                                             FEE:  $35 (plus $20 mat. fee due at reg.)

Offered in cooperation with Ramsey Community School.  Register through M.C.P.E.

Students will view and practice how to prepare/make a baklava tray in class.  After the in class baklava is assembled, it will be put to bake for all to enjoy tasting it at the end of class.  All students will make and assemble their own baklava tray, which they will take home to be baked.  All ingredients will be provided.  Bring to class:  apron, dishtowel, approx. 9x14x2 inch deep baking tray, a brush to apply the butter.  Instructor:  GEORGE CHRISAFIS

 Come join us for an evening of fun and learning as you fully participate in preparing an elegant dinner that your guests are sure to love.  We will prepare a stuffed pork loin with fresh sautéed spinach, roasted peppers and fresh mozzarella. The outside will be crusted with a pistachio topping. Side dishes will include homemade scalloped potatoes and a fresh vegetable medley.  A Caesar salad will be prepared with a homemade dressing. Our grand finale dessert will include a homemade chocolate mousse.  Bring containers to class for leftovers. Instructor:  JOSEPH SCILLIERI

A pavlova is a stack of large meringue layers, baked to a point where the layers are crunchy and the inside is chewy. Topped with cream and fruit, it is a stunning dessert without much effort. In this one night class, each person will make a pavlova to take home.  Bring to class:  apron, dish towel, oven mitts, hand mixer, paring knife and container measuring 12 x 12 or a baking sheet.       Instructor:  KIM HENDRICKSON

 

POTATO PANCAKES - Latkes and Pan Boxty                                   FEE:  $40 (plus $12 mat. fee due at reg.)

Haven't we all tried these simple potato pancakes and not been satisfied with the results? With a few key tips and techniques from Kim, you will master and/or try traditional Latkes and Irish Pan Boxty.  Bring to class:  apron, dish towel, potato peeler and take home container.    Instructor:  KIM HENDRICKSON

 

SOUPER EASY SOUPS & QUICHES                                                    FEE: $70 (plus $40 mat. fee due at reg.)

Join us for two fun filled evenings as we prepare soups and quiches. The first evening you will fully participate in the preparation of Italian wedding soup, spinach quiche, and artichoke pepperoni quiche. The second night will feature beef barley soup, artichoke bacon quiche and quiche Lorraine. Perfect meals for the cold winter months. Do not eat prior to class since you will eat and taste all items prepared in class!
